How do I program the tray icon to show clipboard manager when I single or double click?

In the ClipboardFusion Settings window, click the "Tray Icon Settings" and you can set the actions you want. :)

The one called "HotKey: Show history menu" should give you what you want. :)

OK, another related question. When I click to open Clipboard History, I would like the Pinned list in the front. This is the Default Clipboard Manager list to focus setting under Clipboard Manager, but it's not doing that.

Another setting?

Try setting the tray icon click to "HotKey: Show Local Pinned Items Menu" instead of "Show History Menu."
